Irrewarra Sourdough Bakery
Irrewarra Sourdough is an artisan sourdough bakery, baking handmade sourdough bread.
Situated in the beautiful rural district of Irrewarra, just inland from Victoria’s Great Ocean Road, the bakery was started in 2000 by John and Bronwynne Calvert, driven by a passion for great bread, the use of natural ingredients and artisan baking techniques. Though the bakery has expanded to become Victoria’s largest sourdough bakery, every loaf is still made authentically, hand-cut and hand-shaped.

Our range of Irrewarra Bakery bread uses the best quality ingredients available: the best flour available from a variety of Australian flour mills. Their wholewheat flour is organic and stone ground & the filtered water used is sourced from dams in the Otway Ranges. The Otways have the highest rainfall in Victoria because they are located right on the coastline, resulting in orographic rainfall from evaporation off Bass Strait. 

Irrewarra Bakery bread contains only flour, water, salt and sourdough culture.  The sourdough culture, now 22 years old, contains flour, water and naturally occurring microorganisms including bacteria and yeast. These bacteria and yeast have not been purchased nor added but are wild or native, naturally existing on wheat and in the air and start multiplying naturally when water and flour are mixed to create the right environment for the microbes. No yeast foods such as malt or vitamin C, dough improvers, emulsifiers, vinegar, sugar, oil are added.

Bakery Lievito 

Bakery Lievito was established by Kent Techritz in 2009. Having previously enjoyed success with Flinders Bread, Kent left his wood fired oven behind to travel and work with other bakers to develop his skills, particularly in the area of sourdough bread. 

Bakery Lievito was passed on by Kent to Paul and John Mentiplay, well known for their Baker Boys bread from the Mornington Peninsula, in 2015. Together they continue to operate both Bakeries independently, staying true to Kent’s values that you can still taste in every bite of Lievito bread.

Bakery Lievito has grown to become a bakery making a range of breads to satisfy the premium end of the bread market, with delicious Sourdough, Ciabatta, & Turkish Bread: bread and rolls that pay respect to traditional baking methods which guarantees a texture and flavour that is hard to beat.
